I cannot tell you how many times I’ve longed for proper homemade granola muesli bars. I remember chomping down on them as a kid, and feeling satisfied after I’d finished.
Somehow, the commercial bars these days just don’t live up to that memory.
Maybe it’s the trick of time – the bars aren’t getting smaller, it’s me that’s bigger. That sort of thing. But I can’t help thinking they’re just not all that anymore.
So, as the days warm up and we’re getting outdoors once more, I’m at the brink of frustration. I need a portable, satisfying, and nourishing snack that can go-with me.
Here’s what I’ve come up with; my own homemade granola muesli bar recipe, and I really want to share it with you.
How to Make Granola Muesli Bars
If you’ve never made snack bars like this before, it’s easier than you think! My super simple recipe (below) is all you’ll need to learn how to make granola muesli bars.
When I say simple, I do actually mean simple; mix the dry, mix the wet, mix them together, bake. When baked, cut, and leave to cool. That sort of simple.
Of course, that’s an overly simplified breakdown of the recipe, but that’s really all there is to it.
Granola Muesli Bar Flavours
You have way more choices than what’s in the recipes. You can switch them up, or swap them out, the choice is yours entirely. Just try to aim for the same ratio of wet:dry.
For example; don’t like apples or have a glut of pears, swap them! Easy. Or, maybe you don’t like pumpkin seeds, but adore almonds. Awesome, do it! Have an allergy to honey? Cool, try maple syrup, date syrup, or agave as a change.
To coat, or not to coat is also up to you. You can add in chocolate chips too if you like. Or, if you want an extra energy boost, coat one side in chocolate – dark, milk, or white chocolate all work.
And, if variety is the spice of life, you also have spice to give you variety! Between the natural enhancement of cinnamon or clove and apple, or nutmeg with peach or apricot, you have a world of spice options to bolster the flavours.

If you can, aim for a deeper baking tray, rather than a shallow sheet – you’ll get a better and more even bake, and can make thicker fingers/bars.
Granola Muesli Bar Ingredients
This list couldn’t be easier either, and if you don’t have all the ingredients, just have a look in your pantry for inspiration!
- Rolled oats
- Sesame seeds
- Pumpkin seeds
- Sunflower seeds
- Chia seeds
- Cranberries, dried
- Blueberries, dried
- Egg whites
Now, let’s get on with how to make granola muesli bars!
- Mixing bowls
- Baking tray
- Parchment paper
- Cook's knife
- .5 cup Pumpkin Seeds
- 2 tbsp Sesame Seeds
- .5 cup Honey
- .5 cup Sunflower Seeds
- 3 tbsp Brown Linseed (Flaxseed)
- 3 tbsp Chia Seed
- .5 cup Cranberries, dried
- .5 cup Blueberries, dried
- 2 lrg Apples
- 2 lrg Egg Whites
- 4 cups Rolled Oats
- Measure all the dry ingredients into a large mixing bowl, mix thoroughly.
- Peel, core, and cook the apples, then puree when lukewarm. Add the warmed honey to the apple puree again to combine fully.
- Whisk the egg whites until lightly frothy, add to the apple/honey mix. Pour over the dry ingredients and mix until everything is evenly covered and clumping together.
- Tip the mix into a parchment lined baking tray, press down firmly and level so there are no bits sticking up.
- Bake in at 160˚C/325˚F oven for 25-35mins, or until golden brown across the top of your bake.
- Remove from the oven, and place the tray on a cooling wire - wait 5-10mins before lifting the parchment-clad bake from the tray.
- Once your bars have firmed up a bit - after 10mins of cooling - carefully cut into individual bars. Leave them all together on the paper, and let them cool completely. This will help them retain their finger-like shape.
- For extra decadence, once cold, you can coat the top or bottom in your preferred chocolate; milk, dark, or white.
